About this tool

This free margin calculator starts from your cost price and works out the selling price excluding and including VAT, gross profit, markup, gross margin, price multiplier and food cost percentage. It is built for restaurants, shops and small makers who set prices or want to check how profitable a product or dish is.

Start from what you already know: selling price excluding or including VAT, multiplier, markup, gross margin or a target food cost. Pick the VAT rate (UK rates or 0%) and the currency (EUR, CHF, GBP or USD). You can round the price including VAT, for example to end in .90, and the tool recalculates margin and food cost. A warning appears if you would sell at a loss.

What is the difference between markup and gross margin?

Markup compares profit with the cost price; gross margin compares profit with the selling price excluding VAT. An item costing £4 and sold for £10 excluding VAT makes £6 profit: 150% markup and 60% gross margin.

How do I price a dish from a target food cost?

Choose "The target food cost %" and enter the percentage you aim for: the price excluding VAT equals the cost divided by that percentage. With £4 of ingredients and a 30% target, the price is about £13.33 excluding VAT.
